Traditional Indian Dishes at Chakra

Indian cuisine encompasses a huge range of food, based on the traditions of different cultures, religions and regions across the subcontinent. At Chakra, we want to celebrate the best it has to offer. That’s why our menu features incredible Indian classics, as well as our famous modern dishes. Here are a few of the traditional items on our menu – and what makes them so special.
Lamb Rogan Josh
A signature dish of Kashmiri cuisine, Rogan Josh is an aromatic lamb curry. Originally brought to Kashmir by the Mughals, who were influenced by Persian cuisine, the dish is still enjoyed in South Asia today – and is now a staple of the British curry house, too. Featuring lamb chunks in a gravy based on onions, garlic, ginger, aromatic spices and yoghurt, Rogan Josh is a mild dish. Its characteristic bright red colour is traditionally derived from de-seeded and dried Kashmiri chillies – which taste similar to paprika – making it a good choice for anyone who hasn’t eaten much spicy food before.
It is believed that Butter Chicken was developed by Kundan lal Gujral, the owner of the Moti Mahal Delux restaurant in Delhi. The dish has roots in Punjabi cuisine, and is based on chicken marinated in a cream and spice mixture, cooked in a tandoor, and served in a curry butter sauce. A whole cocktail of spices are used, such as garam masala, cumin, cloves, ginger, garlic, turmeric, chilli, cinnamon, pepper and coriander, but the dish is usually quite mild. With so much cream and butter, it is very rich and luxurious – but worth it.
Biryani is a mixed rice dish originating from Muslim cuisine across the Indian subcontinent. Every region has its own unique variations featuring different vegetables and spices, but chicken or mutton is always the main ingredient. Biryani is also popular internationally, and is eaten across Asia. This simple ‘one pot’ meal is hearty and warming – a great choice for the colder months.
