Egg Bhurji: A Perfect Snack

Egg Bhurji is a great snack or breakfast recipe and is really easy to make. This is a very popular dish in North and Western India as well as Pakistan; and although it may look like scrambled eggs, it's a different dish completely. Egg Bhurji has additional ingredients such as sautéed chopped onions, chilies and spices, making the bhuna masala.   • Prep time: 5 minutes
  • Cooking time: 10 minutes
  • Serves: 4 people

Egg Bhurji


  • 4 eggs
  • 1 big onion thinly chopped
  • 4 tomatoes thinly chopped or pureed
  • 2 green chilies chopped into thin slices
  • ½ tsp mustard seeds
  • 3-4 curry leaves
  • 1 tsp red chili powder
  • ¼ tsp turmeric powder
  • 1 ½ tsp coriander powder
  • ½ tsp cumin powder (jeera)
  • ½ tsp garam masala powder
  • ¼ tsp dry mango powder
  • Fresh cilantro chopped
  • 2 tsp oil
  • Salt to taste


  • Firstly, beat or whisk the eggs in a bowl
  • Heat up a pan and add the oil
  • When the oil is hot enough, add the curry leaves and mustard seeds
  • Allow the seeds to crackle, add green chilies and sauté well
  • Add the chopped onion. Fry the onion for a few seconds and add the tomatoes
  • Add salt, red chili powder and turmeric powder
  • Cooks for 2-3 minutes on a low heat
  • Stir until the oil begins to separate
  • Add the beaten eggs and mix well. Keep on a low heat
  • Mix thoroughly for 2 minutes and add coriander powder, cumin powder and garam masala powder
  • Mix well and sprinkle a little bit of water in
  • Add the dry mango powder, mix well and cover the pan for 2 minutes
  • Leave to cook on a low flame
  • Finally garnish with chopped cilantro and serve with a roti or naan

Tip: Egg Bhurji is meant to be a dry dish, so don't add too much water.
